SHAFER - HILLSIDE SELECT After what was to become a semi-retirement plan from the fast-paced world of publishing, John Shafers 1972 purchase of a 210 acre estate in the heart of the Stag's Leap District, has turned into one of the worlds most respected wine producers. The first wines to be bottled under the Shafer label were in 1978 and only 1,00 cases of cabernet made. It was not until five years later, when Johns son Doug, an enology graduate from UC Davis took over the reins as winemaker, that the concept of the Hillside Select was finally bottled. Gradually and carefully with the help of Elias Fernandez, the Assistant Winemaker the Hillside Select has been fine tuned in to what we have today. The attention to detail at every stage of production is truly inspiring and reveals part of the reason why these wines have become so good. All tasting notes below come from a recent dinner with Doug Shafer where almost every vintage from 1978 onwards were tasted. What was most apparent was the sheer level of consistancy, year in year out. With John, Doug and Alias all doing their upmost, the future looks just as bright as it's illustrious past. DW Shafer Vineyards, Hillside Select, Cabernet Sauvignon --Vintage 1994 Napa Valley In original wooden case A deep cabernet aroma. Stiil youthful. Thick, rich and loaded with tannin.
